For us, it has always been clear that our wines are not created in the cellar, but in the vineyard. Once the grape is harvested, nothing can be improved — in the cellar, you can only try to preserve as much as possible of the grape’s natural character and the terroir.
Cellar techniques take a back seat for us, because we want to bring our grapes into the bottle as gently and untouched as possible — with patience, respect and time.
